Starving In The Land Of Plenty

We live in a land of plenty. There’s fast food, processed foods, junk food, organic food, whole food the possibilities when it comes to our food choices are endless.

You’d think there wasn’t a chance anyone in the United States is malnourished. But that isn’t the case. Even though two thirds of the population is overweight, a new study shows that middle-aged and older Americans-even those who take nutritional supplements-are often deficient in important nutrients.

Malnourished in the Richest Nation on Earth

A study published in the Journal of the American Dietetic Association found that starting as early as middle age many Americans lack the necessary calcium, vitamin C, potassium, and magnesium necessary for good health.

The researchers looked at a large cross section of people from different ethnic, educational, and income backgrounds. They found that many people from all backgrounds fell short of recommended daily levels of crucial nutrients.

While taking dietary supplements reduced the risk of being deficient in calcium, vitamin C, and magnesium, it by no means assured sufficient nutrition. According to researchers, “many adults are not meeting the DRI guidelines even with the help of dietary supplements.”

The researchers conclude that studies on the best way to improve nutrition among middle aged Americans would be valuable.

This isn’t the first study to question how well nourished Americans are. In 1992, the Earth Summit Report, conducted by the UN, found that American farms are 85% depleted of their natural mineral content. That means that on average, the food you eat has only a fraction of the minerals your body needs.

How You Can Ensure You’re Getting the Nutrition You Need

It’s possible to be overweight and suffer from malnourishment. When this happens you aren’t at risk of starving to death, but you are at risk for a number of other health problems. Malnourishment combined with being overweight puts you at higher risk of heart disease and diabetes. It can also lead to thyroid problems, gum disease, anemia, and skin problems.

Our food supply isn’t what it used to be. Poor farming practices deplete the nutrients in the soil, which leads to lower nutrient levels in produce and grains. Widespread use of pesticides and herbicides also changes the nutrient content in our foods.

Livestock is fed a different diet than it once was. That changes the nutrient balance in most of our sources of protein. For instance, animals raised on corn instead of their natural diet have high levels of omega-6 fatty acids and low levels of omega-3s. Foreign substances are also wide spread in the food chain. For example, when you add up all the petroleum-based fertilizers used to raise feed corn, the average cow consumes a barrel of oil in the course of its life.

The solution is to choose foods that are as natural as possible. Choose grass-fed beef over corn-fed beef. Choose chickens raised without hormones or antibiotics. Choose organic produce and grains whenever you can. Typical organic foods contain more vitamins, minerals, and antioxidants than their conventionally grown counterparts.

Supplements play a role, too. The problem with most multi-vitamin supplements is that they are difficult for the body to absorb. Look for one that contains whole foods and that is formulated for easy absorption. I recommend those that contain enzymes. Natural enzymes like bromelain and papain help improve digestion and make it easier for your body to use the nutrients in the supplement.

Many people in the U.S. are malnourished and don’t even realize it. You don’t have to be one of them. Take control of your food choices and select the best quality food available. Select a good multivitamin, too. It may cost a little more, but it will actually deliver the nutrients you need.
